Everything that you eat either fuels disease or improves your gut health…

I started learning about digestion because I had gas, bloating and constipation…

Eating carbs would make my belly blow up, dry my skin and make me sleepy…

This is when I had my Eureka moment…

By brewing beer I learned that yeast suck up oxygen when they digest starch… so it made sense why I would feel fatigued after eating carbs… I would yawn and feel exhausted…

Another observation from brewing beer as that yeast produce carbon dioxide (CO2) when fermenting… so if you eat and get gassy, that’s because of abnormal fermentation happening in your gut…

In other words, it’s not just the food that you eat that makes you tired and gassy, it’s the presence of bad bacteria and wild yeast that creates that abnormal fermentation…

Ultimately, to improve carb digestion you have to reduce the amount of bad bacteria in your gut and create diversity of strong probiotics… This is what we’ll cover in detail during phase 3 of the Beer Diet Project journey…

Before we get to probiotics, let’s start by understanding carbs…

There are good carbs and bad carbs…

What makes a carb good or bad varies…

For example…

Bread is a carb…

Cucumber is also a carb…

The difference is that bread doesn’t hydrate you, it dehydrates you… cucumber on the other hand is water rich so it hydrates you…

When brewing beer I noticed that in order to digest barley grain starch into sugar I needed to soak the grains in water and minerals… The grain would absorb water and I would lose about a third of the water I started with…

That’s when it dawned on me that if I ate bread, the body would break down the starch the same way… it would soak up water and minerals to digest starch…

That doesn’t make bread bad necessarily… you just need to be aware that you need extra water and minerals to digest the starch…

What makes bread bad has more to do with the type of grain used to make the flour and if the dough was leavened…

Traditionally bread was made using ancient grains that contained nutrients and were not modified in any way… modern day grain varieties lack these nutrients and contain proteins (like gluten) that are not easy to digest…

If you want to try out better grains look for Einkorn or other heirloom grain varieties and make sourdough… sourdough is fermented dough… fermentation helps break down starch and proteins which makes this bread easier to digest compared to unleavened bread…

Ultimately, your gut flora dictates whether eating carbs is good or bad for you…

If you get gassy after eating carbs, then the way to improve carb digestion is to go keto…

You can’t just jump onto keto if you have poor metabolism…

Most people that have digestive issues have essentially trained their body to run off of carbs…

Carbohydrates give you explosive energy and should be consumed around high physical activity for a boost of energy… if you only run on carbs, you will put a lot of wear and tear on your metabolism like constantly red lining the engine on your car until it burns out…

It also makes it so that your body “forgets” how to burn fat as a source of energy…

That’s why some people try going keto and find themselves with little to no energy because they haven’t used fat as a source of fuel and may need to retrain their body to burn fat as a source of fuel…

Burning fat as a source of fuel gives your digestive system a break from having to use carbs as a source of fuel… this is what your body needs to heal itself…

Ketosis and fasting (which forces you into ketosis) are the tools I used to improve carbohydrate digestion…

This is the tee up to transition into phase 2…

Fasting is a skill…

There are different levels of fasting… During phase 2 I’ll be walking you through small progressions to start intermittent fasting and work your way up to longer term fasting which is needed to optimize your microbiome…

      My body loved fasting and “keto” well at least I thought so but once back on carbs I am wondering if I hurt my adrenals & kidneys more! Consistently doing phase 1 wondering if ready for phase 2 ?

        I’ve seen you do mostly hydration and vitamin D, but not so much nourishing… to be ready for phase 2 you’ll have to show me that you can put together a minimalistic diet (show me that you have designed a full day where you work on hydration, vitamin D, and nourishment)… You’ll see the videos that give you a template and prompt you to submit a request for a microbiome audit where I check your minimalistic diet and graduate you or tell you where you need to work…
        You’ll also know you are ready because you feel more energy, and notice you are starting to have dreams again…
